• ¼ lemon juice

• 1 tablespoon butter

• 160 g scarlet shrimp (about 4 shrimp)

• 90 g risotto rice

• Cilantro to taste

• Fleur de sel to taste

• Parmesan cheese to taste

• 1 pea leaf

Preparation

Step 01

Preparation Garlic and coriander risotto – risotto à bulhão pato

Add the olive oil, garlic, risotto rice and vegetable stock.

Stir gently.

Gradually add the vegetable stock, stirring slowly, and finish with butter and Parmesan cheese.

Season with coriander at the end.

Preparation of the red prawn

Seasoned with fleur de sel on the grill for approximately 1 minute 30 seconds.

Plating
